Sunflower oil
We can thank the Spaniards for sunflower oil. They were the ones who brought this plant with them from Mexico. In those days, its only value was decorative. It was not until the 19th century that it was discovered to be such a good source of oil. This transparent oil is tinted a very light yellow and has a neutral flavour. It is one of the most commonly used oils in the world and contains no less than 60-65% polyunsaturated fats. This makes sunflower oil perfect as the basis for cold dishes such as salads, chips sauce and dressings.
